Job Description:

Role Objective
The Production Executive at Desi Cooks is responsible for day-to-day production
operations in frozen food manufacturing, ensuring target output, process discipline,
quality compliance, safety, and cost efficiency.
The role requires strong hands-on knowledge of potato processing, frozen food
production lines, manpower handling, and close coordination with Quality and
Maintenance teams.

Key Responsibilities
1. Production Planning & Execution
 Execute daily and shift-wise production plans as per defined targets
 Ensure smooth operation of potato processing and frozen food lines
 Monitor production efficiency, yields, downtime, and wastage
 Ensure production output meets quantity, quality, and delivery schedules

2. Raw Material & Process Handling
 Handle raw potatoes, edible oil, ingredients, and packaging materials
 Basic understanding of potato varieties, grading, size, solids, and storage
 Ensure proper material feeding and handling to avoid damage and losses
 Coordinate with Stores for timely availability of materials

3. Process Control (Hands-On)
 Operate and monitor:
o Washing, peeling, and cutting
o Blanching
o Frying
o IQF Freezing
o Packing, metal detection, and palletizing
 Maintain correct process parameters as per SOPs
 Ensure adherence to CCPs and quality checkpoints defined by QA

4. Manpower Management
 Handle line operators, helpers, and contract labor
 Ensure proper manpower allocation, discipline, and productivity
 Conduct on-the-job training for operators and helpers
 Maintain attendance, shift rosters, and work instructions

5. Coordination with Quality & Maintenance
 Work closely with the Quality team to ensure product compliance
 Implement corrective actions suggested by QA
 Coordinate with Maintenance and Utility teams for breakdowns and PM
 Minimize downtime and ensure machine readiness

6. Safety, Hygiene & GMP Compliance

 Ensure strict adherence to safety rules, GMP, hygiene, and food safety
practices
 Ensure operators follow uniform, PPE, and hygiene norms
 Maintain clean, safe, and organized production areas

7. Documentation & Reporting
 Maintain production records including:
o Batch records
o Production logs
o Downtime and wastage reports
 Report daily production performance to seniors
 Support audits by providing production records and explanations

Preferred Industry Background
Candidates with hands-on experience in reputed frozen food / potato processing

Key Skills & Competencies
 Strong hands-on production knowledge
 Understanding of frozen food and potato processing
 Manpower handling and shop-floor discipline
 Ability to work under production pressure

 Basic understanding of food safety and quality systems

Qualification
 BSc / Diploma / BE – Food Technology / Mechanical / Production
 ITI or relevant technical background acceptable with experience

Experience
 3–7 years in food manufacturing
 Minimum 2–3 years in frozen food / potato processing
 Experience in French fries / frozen snacks / RTE preferred

CTC & Benefits
 CTC: ₹ 5.50 Lakh – 7.00 Lakh per annum (adjustable as per experience)
 Accommodation: Provided by company
 Food Allowance: Provided by company
 Uniform: Provided by company

Working Hours
 Duty Time: 9 hours per day
 Shift-based operations as per production schedule
