Job Overview

Orbit Global HR Consultants LLP, a leading FMCG hiring agency in Vijayawada, is looking for an experienced QA/QC Manager – Food Safety & Compliance for a reputed packaged bakery manufacturing organization in Vijayawada.

This is a senior Plant Quality Assurance and Food Safety position responsible for building and strengthening the plant's quality management systems, implementing HACCP and leading the organization toward FSSC 22000 Version 6 certification.

The ideal candidate should have strong hands-on experience in food manufacturing QA/QC, bakery quality, HACCP implementation, FSSC 22000 certification, FSSAI compliance, internal audits and quality team management.


Key Responsibilities

1. FSSC 22000 v6 Certification

  • Conduct a comprehensive FSSC 22000 v6 gap analysis.
  • Develop and execute the certification roadmap.
  • Own food safety manuals, PRPs, OPRPs, HACCP plans and supporting documentation.
  • Lead internal audits and CAPA closure.
  • Coordinate with external certification bodies.
  • Train employees on FSSC 22000 requirements.

2. HACCP & Food Safety Management

  • Implement and validate the existing HACCP plan.
  • Identify and monitor Critical Control Points (CCPs).
  • Maintain GMP, GHP, pest control, allergen management, sanitation and supplier approval systems.
  • Conduct food safety team meetings.
  • Establish end-to-end traceability for raw materials and finished products.

3. Bakery Quality Control

  • Establish in-process quality checks across breads, buns, rusk, cookies, cupcakes and cakes.
  • Develop finished-product specifications for moisture, texture, weight, taste, crumb structure and appearance.
  • Supervise QC inspections and quality records.
  • Manage batch documentation and release certificates.
  • Handle product holds, non-conformances, rejections and root-cause analysis.
  • Establish and enforce acceptable quality limits.

4. Raw Material & Supplier Quality

  • Develop incoming inspection standards for flour, fats, sugar, yeast, improvers, packaging and additives.
  • Maintain approved supplier lists.
  • Conduct supplier quality audits.
  • Monitor supplier non-conformances and corrective actions.
  • Coordinate with procurement for rejection and resolution of non-conforming materials.

5. Customer Complaints & Regulatory Compliance

  • Manage customer complaints from investigation through CAPA closure.
  • Maintain product recall and withdrawal procedures.
  • Ensure FSSAI and Legal Metrology compliance for labelling and nutritional information.
  • Manage FSSAI licence renewals and regulatory documentation.
  • Coordinate with third-party laboratories for product and water testing.

6. Team Management & Quality Culture

  • Lead and develop the QC Inspector team.
  • Establish training programs covering GMP, GHP, HACCP, hygiene and food safety.
  • Build a strong food-safety culture across the production floor.
  • Report quality KPIs including rejection rate, complaints, audit findings and certification progress.

Mandatory Candidate Requirements

Education

  • B.Sc. / M.Sc. in Food Technology, Food Science, Microbiology or Dairy Technology.
  • Qualification from a recognised institution; NIFTEM, CFTRI or equivalent is preferred.
  • FSSC 22000 Internal Auditor certification is mandatory.
  • HACCP Level 3 certification or equivalent is required.
  • FOSTAC Food Safety Supervisor certification is mandatory.

Experience

  • 7–10 years of progressive QA/QC and food safety experience in food manufacturing.
  • Minimum 3 years in a managerial or supervisory position.
  • Experience in FMCG bakery, biscuit, snack food or allied food manufacturing is essential.
  • Must have personally led or co-led at least one FSSC 22000 certification audit through successful certification — this is a non-negotiable requirement.
  • Hands-on HACCP implementation experience in a live production environment.
  • Strong knowledge of FSSAI, Legal Metrology and food labelling compliance.
  • Experience managing QC teams and conducting internal food-safety audits.

Strong Telugu and English communication skills are essential, particularly the ability to communicate and train food-safety requirements to shop-floor employees in Telugu.

The candidate should be process-driven, documentation-oriented, comfortable building systems in a developing environment and capable of maintaining strict food-safety standards while working constructively with production teams.
