Job Description:
A Resort Head Chef job description involves overseeing all kitchen operations, from creative menu design and daily food prep to managing staff, controlling inventory/costs, ensuring hygiene, and liaising with management to deliver exceptional culinary experiences for resort guests and events. Key duties include menu development, team leadership, quality control, supplier management, and maintaining profitability within the resort's diverse dining outlets and functions. 
 
Key Responsibilities
  • Culinary Leadership: Design creative, high-quality menus for various resort venues (restaurants, bars, room service, events) considering local tastes, dietary needs, and seasonal ingredients.
  • Kitchen Operations: Supervise daily food preparation, cooking, and plating; ensure consistency, quality, and timely service for all meals.
  • Staff Management: Recruit, train, schedule, motivate, and manage the kitchen brigade (sous chefs, line cooks, prep staff).
  • Inventory & Cost Control: Manage food purchasing, inventory levels, ordering, and minimize waste while maintaining budget targets.
  • Hygiene & Safety: Enforce strict food safety, hygiene (HACCP), and health & safety regulations.
  • Liaison: Collaborate with the Food & Beverage Manager, General Manager, and front-of-house staff to align culinary offerings with overall resort strategy.
  • Innovation: Stay updated on food trends, experiment with new recipes, and introduce innovative dishes.

  • Proven culinary expertise & creativity.
  • Strong leadership, communication, and interpersonal skills.
  • Business acumen (budgeting, cost control).
  • Ability to work under pressure in a fast-paced environment.
  • Excellent organizational and problem-solving skills.
  • Knowledge of food safety standards. 
 
Reporting Structure (Typical)
  • Reports to the Food & Beverage Manager or General Manager.
